Simple question really, is there any way to get new quests to show up in the minimap at all?

You can only have one quest "Active" at a time - by selecting that quest in your log. The Active quest will then show a green star/arrow in the mini-map, the compass, and on the world map showing you the direction/destination you need to go for the next leg of the quest.

If you are several zones away, the star/arrow will point you to the nearest portal and the name of the destination zone will appear in green on the map.

I meant an available quest that you haven't yet accepted.

No. You just have to look around outposts and see how has a green question mark over their heads.

Remind though, some quests are found in explorable area's. Sometimes as a follow up quest, but some times not. The most famous one is given in the mission Fort Ranik called "Deliver a message to my wife".

If you don't want to miss any quest check the outpost/town/explorable area your in at the wiki.
